Long Chim Melbourne, one of star chef David Thompson's low-key, high-octane restaurants focusing on Bangkok street food, is finishing up at Crown Casino. A new Thai restaurant, Ging Thai, will open on July 12, just four days after Long Chim's final service on the 8th in the Southbank space.

A spokesperson for Crown says that 'after 2½ years, Crown Melbourne and Long Chim have agreed to part ways. Each party wishes the other every success in their respective ventures'.
The brief for Ging Thai is rather broad at this stage. Crown's spokesperson has simply promised 'a new look and feel'. Bangkok-raised Australian chef On Saengyojanr, who will head the kitchen, says she will put a modern spin on 'traditional Thai' dishes.
GING THAI offers fresh, true Thai food with a twist. With delicious smells and tastes, bright colours and flavours and no-fuss exceptional service it’s a place to catch-up and unwind over fresh food and enticing handmade cocktails in a welcoming, lively restaurant and bar. 18+ T&C Apply – To receive the welcome bonus Thai Restaurant Crown Casino Perth a minimum deposit of £/€/$ 10 is required. Dishes include pomegranate chicken salad with galangal, mandarin and toasted coconut, boat noodles typical of the Chatuchak markets, but also a couple of Issan-style dishes such as the spicy mince dish, larb, and hot and sour pork soup.
Fans of Sydney and Perth's Long Chim restaurants needn't worry. The Melbourne branch has been operating on a third-party licence agreement, and its closure has no effect on the other restaurants.
Ging Thai will open at Crown Casino, 8 Whiteman Street, on Friday, July 12.

Crown’s currently unnamed third hotel tower in Melbourne has announced that Gordon Ramsay’s Maze restaurant will open in February 2010.
After an agreement with Gordon Ramsay Holdings International, an Australian version of Maze — one of London’s popular restaurant concepts with outlets in New York and Prague — is set to open within Crown’s new hotel.
“[It] will fit extremely well within the positioning of our new hotel as Maze has become renowned for being stylish, contemporary and providing an innovative food offer,” said Crown CEO David Courtney.
“Maze will be hugely popular and will be a major drawcard for local, interstate and international visitors.”
Gordon Ramsay voiced similar sentiments: “This is our first step in bringing the Gordon Ramsay brand to Australia and after having seen the way Crown operates, I feel that this is an exciting and challenging opportunity.”
While based on French cuisine, Maze’s food has Asian influences and offers small tasting plates.
It in has been awarded a Michelin star and most recently was named Best Breakthrough Restaurant at the San Pellegrino World’s Best Restaurant Awards.
